Welcome to the first Saturday of September. It’s mid-morning and I sit here, still in jammies, typing out this recipe for you all. Two kids are gone with Daddy to get new tires for the car and the other one is riding her trike around INSIDE the house, with her preschool shoes on, because well….she’s the baby of the family so I actually think this stuff is cute. A candle burns on the stove, music plays and dishes wait for me in the sink. They’ll be up next after I finish this post.
Something happened to me this week….September got me good. In the way that makes me want pumpkin everything, boots, scarves, layers, twinkle lights and I even feel like cooking dinner for my family. I admit that I love when school starts and we settle back into new and familiar routines. Over the last few days, we met with teachers, sorted through a TON of papers and we had a couple of GREAT days at school. The weather must have caught word that school is starting because perfectly timed, the days suddenly cooled.
So, yesterday after the gym, the girls and I went to the store and came home with things to make Cauliflower Soup, cranberry pumpkin breakfast cookies ( I Insta-storied about them) and granola.
While preparing to write this post, other food bloggers came to mind (shame on me for allowing myself to compare) and I realized that a lot of people write LOTS of words before sharing a recipe…..like paragraph upon paragraph. In this space, that might happen once in awhile, but most of the time, that’s not the style you’ll find here. So, I hope you don’t mind me simply getting to the point and saying that this Granola is BOMB and you need to make it.
Maple Butter Pecan Granola is a one bowl recipe. It’s a quick 10 minute throw together and you can modify as you wish. My kids don’t love large pieces of nut so you’ll see that I chopped mine really small. Feel free to add in dried fruit if you wish. Most importantly, pay attention to it when it’s cooking. No one wants burned granola. Gently stir it while it’s baking and remove it from the oven when it starts to turn light brown and smell good.

- 1/4 cup butter
- 1/2 cup pure maple syrup
- 1/2 cup chopped pecans
- dash of salt
- 1 tsp. cinnamon
- 3 cups old fashioned oats
- Preheat oven to 290*
- In a medium sized glass bowl, melt butter in the microwave.
- After butter is completely melted, stir in the maple syrup, pecans, salt cinnamon and oats.
- Grease a cookie sheet and evenly spread the granola.
- Bake for 15 minutes and then stir.
- Bake for another 10 minutes or until the granola starts to lightly brown and smell good.
- Stir well and then allow to completely cool before storing in an airtight container.
